  • Wheat Flour – 1 cup
  • Semolina/ Rava/ Sooji – 1/4 cup
  • Carom Seeds – 1/2 tsp
  • Salt – 1 tsp
  • Oil – 3 tbsp
  • Lemon Juice – 1 tsp
  • Add Water
  • Oil – 2 tbsp
  • Cumin – 1 tsp
  • Asafoetida – 2 pinch
  • Coriander Coarse Powder – 1 tsp
  • Fennel Seeds – 1 tsp
  • Green Peas – 1 cup
  • Boiled Potato – 1 pcs
  • Red Chilli Powder – 1 tsp
  • Turmeric – 1/4 tsp
  • Coriander Powder – 1 tsp
  • Cumin – 1/2 tsp
  • Garam Masala – 1/4 tsp
  • Chaat Masala – 1 tsp
  • Ginger Green Chilli Paste – 1 tsp

Materials

  • Wheat Flour – 1 cup
  • Semolina/ Rava/ Sooji – 1/4 cup
  • Carom Seeds – 1/2 tsp
  • Salt – 1 tsp
  • Oil – 3 tbsp
  • Lemon Juice – 1 tsp
  • Add Water
  • Oil – 2 tbsp
  • Cumin – 1 tsp
  • Asafoetida – 2 pinch
  • Coriander Coarse Powder – 1 tsp
  • Fennel Seeds – 1 tsp
  • Green Peas – 1 cup
  • Boiled Potato – 1 pcs
  • Red Chilli Powder – 1 tsp
  • Turmeric – 1/4 tsp
  • Coriander Powder – 1 tsp
  • Cumin – 1/2 tsp
  • Garam Masala – 1/4 tsp
  • Chaat Masala – 1 tsp
  • Ginger Green Chilli Paste – 1 tsp
  • Salt as per Taste
  • Lemon Juice
  • Chopped Coriander Leaves

Instructions

  • Take a wide plate and add 1 cup of wheat flour, 1/2 tsp of carom seeds, 1 tsp of salt, 3 tbsp of oil, and 1 tsp of lemon juice. Mix well.
  • Gradually add water and knead into a semi-medium soft dough.
  • Cover the dough and let it rest for a while.
  • Place a pan on the stove, add 2 tsp of oil, and heat well.
  • Add 1 tsp of cumin seeds, 2 pinches of asafoetida, 1 tsp of coarse coriander powder, 1 tsp of fennel seeds, and 1 cup of boiled green peas. Roast well.
  • Add 1 boiled and crushed potato, 1 tsp of red chilli powder, 1/4 tsp of turmeric powder, 1 tsp of coriander powder, 1/2 tsp of cumin powder, 1/4 tsp of garam masala, 1 tsp of chaat masala, and 1 tsp of ginger-green chilli paste. Mix well.
  • Cook for a few minutes, then add salt as per taste and mash everything with a masher.
  • Add a little lemon juice and chopped coriander. Mix well.
  • Cook for 2 more minutes, then turn off the flame, transfer the mixture to a bowl, and let it cool.
  • Once cooled, shape the stuffing into small rolls.
  • In a small bowl, mix 2 tbsp of all-purpose flour, a pinch of salt, and water to make a slurry.
  • Check the dough, take a large portion, and roll it out thinly.
  • Cut the rolled dough into squares, then cut each square into strips.
  • Place a stuffing roll on the rolled dough, wrap it, and seal the edges by applying the slurry.
  • Repeat the process with the remaining stuffing and dough.
  • Heat oil in a pan for frying.
  • Once the oil is hot, add the prepared rolls and fry until golden and crispy.
  • Once crispy and golden, transfer them to a plate and fry the next batch.
  • Your crispy Matar Kachori Rolls are now ready to be enjoyed! 😊
