Materials

  • Broken Wheat/Dalia – 1 Cup
  • Jagerry/Gud – 1 Cup
  • Mixed Dry Fruits -1/2 Cup
  • Ghee – 4 tbsp
  • Water – 2 Cups

Instructions

  • Heat 1 tablespoon of ghee in a pressure cooker over medium flame.
  • Add chopped cashews and almonds, roast until golden, then transfer to a plate.
  • In the same cooker, add chopped coconut and roast slightly. Transfer it to the plate.
  • Now, add foxnuts and roast until they turn crispy. Remove and keep aside.
  • Add 2 tablespoons of ghee to the cooker and let it heat well.
  • Add 1 cup of broken wheat (daliya) and roast on a low flame until aromatic.
  • Pour in 2 cups of water, mix well, and pressure cook for 2-3 whistles.
  • In a separate pan, add 1 cup of crushed jaggery and 1 cup of water. Heat until the jaggery melts and comes to a boil.
  • Once done, pour the jaggery syrup into the cooked daliya and stir well.
  • Add saffron-infused water, roasted dry fruits, cardamom powder, and grated nutmeg. Mix well and cook until the mixture thickens.
  • Turn off the flame once the Lapsi reaches the desired consistency.
  • Your Gujarati Sweet Lapsi is now ready to be served! Enjoy its rich, nutty, and aromatic flavors. 😊
