Aloo ki Sabji is all time favourite basic Sabji made with diced potatoes or boiled & mashed potatoes and is simple recipe made with basic ingredients available at home .Aloo sabji is like by every indian & it goes well with Poori , Roti , Chapati , steamed rice , & Paratha. Potatoes are used most of the time to make various curries.

एक बार पूरी वाली आलू की सब्जी इस नए तरीके से बनाकर तो देखिए हलवाई की सब्जी फेल होजाएगी Aloo ki Sabji

INGREDIENTS
Cumin Seeds – 1 tsp
Crushed Coriander Seeds – 1 tsp
Carom Seeds – 1 tsp
Fenugreek Seeds – 1/2 tsp
Bay Leaf – 2 pcs
Dry Red Chilly – 2 pcs
Oil/Ghee – 2 tbsp
Grated Ginger – 1 tbsp
Finely chopped Green Chilly – 1 pc
Asafoetida – 1/2 tsp
Finely chopped Tomato – 3 pcs
Slit Green Chilly – 2 pcs
Salt to taste
Turmeric Powder – 1/2 tsp
Black Salt – 1/2 tsp (optional)
Black Pepper Powder – 1/2 tsp
Red Chily Powder – 1 tsp
Coriander Powder – 2 tbsp
Dry Mango Powder – 1/2 tsp
Boiled Potatoes – 4-5 pcs (medium)
Dry Fenugreek Leaves – 1 tsp
Water – 1 & 1/2 cup
Garam Masala – 1/2 tsp
Finely Chopped Coriander Leaves

  • INSTRUCTIONS
  • To make Aloo wali Poori Ki Sabji take a kadhai.
  • Add oil & let it heat on medium flame.
  • Add Whole Spices & reduce the flame to low-medium.
  • Add Bay Leaf & Dry Red Chilli & roast it.
  • Add Grated Ginger,Finely chopped Green Chilly & Fry.
  • Add Asafoetida & mix well.
  • Add Finely chopped Tomato & mix well.
  • Add Green Chilli & mix well.
  • Keep the flame medium.
  • Cook until tomato releases Oil.
  • Add Salt & cook well.
  • Add Dry Spices(Turmeric Powder,Black Salt,Black Pepper Powder,Red Chily Powder,Coriander Powder,Dry Mango Powder).
  • Mix Well & fry for 1 minute on low flame.
  • Add Boiled & mashed Potatoes & cook for 2-3 minutes on medium flame.
  • Crush Dry Fenugreek Leaves & add Water & mix well.
  • Let it boil on medium flame.
  • Cover & cook for 2 minutes.
  • Add Garam Masala & Turn off the flame.
  • Garnish with Coriander leaves.
  • Aloo wali Poori Ki Sabji is ready to serve.Enjoy!!
